Olive trees and grass surround the vines at Domaine de Collin, where this biodiverse farm in the Limoux region produces delightful, balanced wines, naturally. Founded in 1980 by Philippe Collin, the Domaine controls the entire process from vineyard to the bottle. Philippe was raised by a vigneron in the Champagne region, and he brought his knowledge of champagne to the Languedoc. The altitude, microclimate, and soil give this vineyard the ability to produce both wines of depth and complexity at a great value. Located a couple of hours from the Mediterranean, it is the coolest area in the Languedoc. Limoux is among the earliest areas in the world known for producing sparkling wine and records show it started producing them as early as 1531. Therefore, all Limoux Cremants are the grandparents of Champagne!
